OPTIMALISASI EKSTRAKSI INULIN DARI UMBI TANAMAN DAHLIA (Dahlia SP. L) MENGGUNAKAN PELARUT ETANOL

Abstract

Dahlia is a floriculture plant with tuber that rich of inulin. Inulin is soluble in hot water and it will settle on cool temperature in alcohol. The inulin extractionto use hot water from dahlia tubertake from Bukittinggi of West Sumatra. The inulin potentially to develop as the main material production of fructosa syrup, production of FOS (fructooligosaccharida), as prebiotic and production of levulinic acid.The purpose of this research is finding the maximal quantity of inulin by using ethanol-air extraction method. The data was taken by variation of ethanol concentration was 30%, 40%, 50% and 96%. The result of the research shown that the use of 30% ethanol as much as 40% filtrate volume or the end of ethanol concentration 8,57% that was giving maximal result based on the best quantity of inulin extraction. Inulin flour produced is white grey. Qualitative tests with Seliwanof and Nelson- Somogyi methods shows that inulin positive contained of fructose and reducing sugar.
