Abstract

A prototype has been designed that serves to identify the level of maturity of oil palm fruit, the level of maturity greatly affects the quality of CPO (Crude Palm Oil) of oil  palm fruit. This system uses the Laser speckle imaging (LSI) method by analyzing changes in the contrast value of the speckle pattern. The resulting speckle pattern was in the form of random scattering patterns of oil palm fruits that were illuminated by laser and analyzed using Matlab 2015a Software. The contrast results from LSI show, raw fruit has an average contrast value of 0.36727, ripe fruit 0.45444, and overripe fruit 0.50142. The contrast value of oil palm fruit speckle patterns increases with increasing level of maturity. Changes in speckle pattern are influenced by the texture and color of the fruit. LSI method is able to analyze the level of maturity according to changes in texture and color of oil palm fruit.
