Abstract

Mudskipper are are amphibious fish and include endemic fish, so they can not beĀ found in any place and reside in the intertidal mudflats or mangrove swamps. These fish are relatively unused for food. This study aims to determine how to supply fish protein concentrate with minimal protein loss. The provision of fish protein concentrates is carried out by boiling, steaming and wet warming of fish and analyzed for quantity or loss of protein during the heating process. The results obtained loss of protein 14.5; 9.9; and 2.3% respectively on the fish protein concentrate of processed by boiling, steaming and wet warming.
